For this recipe, you only need a few ingredients; 1 large zucchini, 2 tablespoons of olive oil and some salt.

To get started, preheat your oven to 225 degrees F.

Line two baking sheets with silicone mats.

Using a mandolin (or slicing by hand), thinly slice the zucchini until they have a thickness similar to that of a potato chip.

Place the zucchini slides onto some paper towels, adding another paper towel on top to absorb the excess liquid that comes from this vegetable.

Then, place the zucchini slices on your silicone baking mats. They can be placed fairly close to one another, but be sure to not overlap them.

Add the olive oil into a bowl, and use a brush to coat each side of the zucchini.

Sprinkle on some salt.

Place in the oven and bake for 2 hours or until crispy and slightly browned.

Cool before serving.
