Although this recipe takes approximately 2 hours and 10 minutes to prepare and cook (10 minutes prep and 2 hours baking), it is actually very simple and the flavor is immaculate. It is important that you give yourself a little extra time than what is required as the baking process can go longer than the 2 hours, depending on your oven. You will also need to let the chips cool before devouring then, so generally speaking, you will have approximately 50 zucchini chips to snack on in less than 3 hours.

Enhance Your Cooking Experience

To make the prep process easier, you definitely want to invest in a mandolin, as thinly slicing the zucchini by hand can be very tedious. You also want to be mindful of the salt used, as the zucchini slices will shrink, and what first seemed like an adequate amount of salt can quickly become too much. In addition, it is recommended to use silicone baking mats to get the texture just right, but it is also recommended to keep any extras in a silicon storage containers, and for no longer than 3 days. You'll be amazed at how fresh the zucchini chips taste, even days afterwards when using such storage options. However, other than that, you are ready to get started!

For this recipe, you only need a few ingredients; 1 large zucchini, 2 tablespoons of olive oil and some salt.

To get started, preheat your oven to 225 degrees F.

Line two baking sheets with silicone mats.

Using a mandolin (or slicing by hand), thinly slice the zucchini until they have a thickness similar to that of a potato chip.

Place the zucchini slides onto some paper towels, adding another paper towel on top to absorb the excess liquid that comes from this vegetable.

Then, place the zucchini slices on your silicone baking mats. They can be placed fairly close to one another, but be sure to not overlap them.

Add the olive oil into a bowl, and use a brush to coat each side of the zucchini.

Sprinkle on some salt.

Place in the oven and bake for 2 hours or until crispy and slightly browned.

Cool before serving.
